Ibores Cheese - OD

Ibores is a semi-firm raw goat’s milk cheese rubbed with smoky Pimentón de la Vera, making for a stunning contrast with its ivory interior. The cheesemaker, Maria del Carmen, has been making the cheese since 2000, using milk collected from five local farmers. Walking the fine line between moist and dry, Ibores has a unique texture for a raw goat’s milk cheese. Its paste has a nice fruity bite balanced with a mellow nuttiness and earthy flavor from the terroir of the region. DOP: Denominazione di Origine Protetta, which means Protected Designation of Origin.
